I know it’s not fair to mention outdoor grilling in the winter: but Alabama has had some fabulous weather. I had to celebrate by breaking out my favorite accessory: Za Pizza Grill. It’s a great way to ensure your meal has all the healthy (or crazy!) ingredients you won’t get from a greasy chain. This is my phenomenal recipe for buffalo chicken pizza, which is a good source of protein, fresh veggies, and low-fat dairy (warning: if you’re carb conscious, you may want to opt for a thin crust):
Low-fat, part skim shredded mozzarella cheese
2 boneless chicken breast
store bought whole wheat pizza crust
Moore’s buffalo wing sauce (15 calories, 1 gram of fat and carb per serving: this is an amazing find.)
green bell pepper (cut in strips)
red roasted pepper (cut in strips)
Roasted tomato slices
First, boil chicken breasts and marinate in the buffalo sauce. Saute the roasted red pepper and green pepper strips. Apply a thin coating of the buffalo sauce to the pizza crust. Cover base with a thin “coat” of motz. Then apply chicken, peppers, and another coat of motz. Add the sliced tomato, and you are ready to put your pizza on the outdoor grill.
The pizza should cook in about 20 to 30 minutes.
